Beverage Director
P.F. Chang's China Bistro, Inc.
As Director of Beverage for P.F. Chang's China Bistro, Mary Melton brings more than 25 years of industry experience to her role. She is responsible for the overall strategy of the beverage program across 190 restaurants and manages the creation of beverage menus, the wine program, drink innovation and development, wine education and bartender training.

Prior to joining P.F. Chang's in 2005, Mary worked with the Henry Wine Group as a fine wine specialist and gained experience in wine sales with the Regal Wine Company. Mary's first venture into the industry included restaurant and nightclub management in San Diego.

New Zealand has a relatively short wine-making history. It’s a cooler wine area compared to its neighbor Australia and is broken into two large islands. The North Island consists of the wine growing regions of Auckland, Gisborne, Hawkes Bay and Martinborough. The South Island has Marlborough, Caterbury and Central Otago. New Zealand is most famous for its Sauvignon Blanc from the Marlborough region but recently (within the past 5 or 6 years) has gained attention for their Pinot Noirs. New Zealand has captured the distinct classic flavor characteristics known to this complex grape.
